Due to the artisanal and seasonal nature of our products, we rotate items online just as we do on our shelves in the shop. So we may not always have what you are looking for today, but check back in regularly to see what’s new, fresh and exciting!
Below are details of how we manage our online store and how we take care of our customers.
How to Order
Orders can be placed 24 hours a day, 7 days per week, via our online store. Telephone orders can also be placed during store hours (518-392-8811).
While our shipping department is fantastic, you may prefer to pick up your order from our shop in Chatham, NY. Simply place your order online and select “Pick Up” when checking out.
Shipping & Delivery
We require a minimum of 24 hours to receive and process orders, as we cut, wrap, pack, and ship with care directly from our shop to your front door. During December and other peak periods, we may require several days to process and deliver your order, and will inform you of any unusual delays.
Due to the high cost of Fedex we have chosen make a change and ship all items via USPS Priority Mail. You will receive an email with the tracking tracking number once your package is sent.
- We cannot ship on Saturday or Sunday
- We cannot ship internationally due to import/export restrictions
We generally ship on Wednesday afternoons for a Thursday or Friday delivery, however, for the month of December we will be shipping Monday through Thursday. Please indicate in the notes section your desired delivery date, otherwise we will ship as soon as possible.
Due to seasonal availability and supply limitations, we may need to substitute items within one of our gift selections to ensure freshness and timely delivery. We will always compose your gift with alternative ingredients of equal or greater quality and value and notify you of such changes.

Add a note in the comment section and we’ll be sure to include it with your package.
Sending multiple gifts to different addresses?
Similar to other online stores, you’ll need to place each order separately. The good news is you’ll receive a tracking number for each gift.
Our Holiday Shipping Cut-off Dates
Overnight: Orders must be placed by 12/21 to ship 12/22 and arrive 12/23
2-Day: Orders must be placed by 12/20 to ship 12/21 and arrive 12/23
Overnight: Orders must be placed by 12/28 to ship 12/29 and arrive 12/30
2-Day: Orders must be placed by 12/27 to ship 12/28 and arrive 12/30
Bimi’s Cheese Shop cannot assume responsibility for any incorrect addresses provided; delivery, return and re-delivery charges will apply. We strongly recommend you confirm that the recipient or other responsible party will be available to receive, open, and properly store you order. We are unable to replace cheeses that perish due to recipient's being unavailability at the time of delivery. Furthermore, please note that our boxes are clearly marked "perishable" on the outside and we are not responsible for the items received but not opened. Please inspect all packages upon receipt and us within 24 hours with any problems. Credit refunds will not be granted if unsatisfactory items are discarded or consumed.
Privacy & Security
Our site is hosted by Shopify and complies with the highest level of PCI (Payment Card Industry) standards. All e-mail addresses and personal information (such as name, address, credit card number, etc.) are transmitted in an encrypted form for your protection. All information is collected for our use only; Bimi’s Cheese Shop protects this information both online and offline.
